For me, spring recipes are all about freshness and zing! We’re just on our way out of the bitter winter where the dinner table has been mostly populated by soups, stews and comfort food… but it’s not quite salad season, so we need something in between.

That’s why Indian food is the perfect choice for spring. A lightly sauced, medium curry like my Chicken Jalfrezi can bridge the gap between the stodgy comfort of typically British winter fare and the lightness of the summer barbecue. And Bombay Aloo is a great alternative to roast potatoes.

There are also some typically spring ingredients that you might not expect to feature in Indian cuisine. For example, asparagus is absolutely delicious in the springtime. I love to serve it lightly grilled with a couple of simple Indian spices that accentuate its savoury signature taste.

When the colder months roll in and the time comes to whip out my favourite winter recipes, it’s hard to stifle the glowing smile that creeps across my face. For me, there’s nothing quite like snuggling in for the night with a rich and fiery curry, served with fluffy, aromatic rice.

I love to experiment with a host of seasonal vegetables and mix in my favourite spices to create a comforting bowl of homemade joy. From pumpkin to butternut squash, cauliflower to carrot, the range of succulent winter vegetables you can cook with at this time of year is just mouth-watering.

You can help stave off winter illness with a spicy curry, and get your blood pumping with some tasty fragrant rice. Those long winter dinner parties will go off with a bang if you serve up a delicious array of healthy and comforting dishes.

View all Dry Masala

Indian food from your average curry house or take away often seems to be all the same – chunks of meat floating in a thick sauce. Although there are some traditional curries like this, many are actually made with a dry masala.

Masala is Punjabi for “spices”. It’s the name given to the paste that’s used to give curry its deep flavour. You can have a liquid masala sauce, like you’d find with a Korma, or you can have a dry masala, where the spice mixture clings to the meat.

Dry masala dishes are often a lot more intense in flavour as they contain less water, which dilutes the dish. In order to get the sauce to cling, usually a small amount of liquid is added after frying the ingredients, and the sauce is reduced until most of the water has evaporated.
