Mulled Wine

There is nothing more warming and seasonal than a cup of delicious mulled wine.

This is a real memory drink and it takes me back to my brother and sister-in-laws wedding in Ireland where they served this delicious spiced wine at the reception (well, before we broke out the whiskey).

It was a freezing October day and we had made it through two wedding ceremonies. One in a Sikh temple on one side of the town and then a church service held on the opposite side of the town. Both of which had been amazing in their own way but we were shattered by the end of the afternoon. I can't imagine how the bride and groom were feeling but when the party started the mulled wine was the perfect welcoming, warming hug we all needed.

Needless to say the reception was great and the dancing was pretty terrible... but that's what weddings are all about. Cheers!

  • Method
  • 2 bottles of red wine,
  • 200g caster sugar
  • 1 clementine
  • 1 orange
  • 1 lemon
  • 6 whole cloves
  • 1 stick cinnamon
  • 2 bay leaves
  • 1 whole nutmeg
  • 2 star anise

Method

  1. Put the sugar in a large saucepan throw in the cloves, cinnamon, bay leaves, star anise and about 10-12 gratings of nutmeg.
  2. Peel large parts of the clementine, orange and lemon and add the peel to the pan.
  3. Pour in enough wine to cover the sugar and leave it to simmer until all the sugar has completely dissolved.
  4. Bring the wine to a rolling boil for 4-5minutes to infuse all the spice flavour into the wine and turn into a rich dark syrup and will smell amazing.
  5. Once it's thick reduce the heat and pour in the remaining wine then heat it through for 5 minutes. Ladle into glasses and serve to your loved ones.
