Sausage and Courgette Curry

My version of a spicy sausage curry

A very special dish in my eyes probably because its the first curry my husband ever cooked for me back in the days when he was still trying to impress me. Its absolutely a dish that I want to include in my collection because it has such personal memories for me but I have to confess that it's not one of my dishes (although this is how I now cook it). It turns out that the goddess of Indian food herself Madhur Jeffery was the inspiration for my husband to cook up this sensation. So whether you are hoping to impress someone or you want to try a Madhur classic this is a good one.

  • 6/8 thick pork sausages
  • 1 large onion peeled and chopped
  • 1 tsp cumin seeds
  • 3 cloves garlic, peeled
  • 3cm of fresh ginger, grated
  • 2 large or 6 mini courgettes
  • 1 tsp rapeseed oil
  • 1 tsp chilli powder
  • 1 tsp turmeric
  • 200g tin plum tomatoes
  • ½ tsp salt
  • 1 tsp garam masala

Method

  1. Heat the oil in a large frying pan over a medium heat and fry the sausages, turning until they are brown. Remove and put on a plate.
  2. In the same pan and add the cumin seeds once the sizzle and become fragrant add the onions.
  3. Fry for about 10 minutes until they become translucent and start to turn golden brown.
  4. Add the garlic and cook on a gentle heat for a few minutes.
  5. In the mean time wash and chop the courgettes.
  6. Add the tomatoes and stir in the ginger, turmeric, salt, and chilli powder and stir for a further minute. Once the masala is thick and shiny add the courgettes.
  7. Bring the pan to a simmer, cover, then turn heat to low and cook for 10 minutes. Cut the sausages into chunks and add them to the pan.
  8. Cover and cook for about 5 minutes until hot.
  9. Add the garam masala, sprinkle with coriander and serve

    The recipe calls for ginger but there is no mention of it in the method. When does it go in?

    We made with a mixture of zucchini (courgettes) and cauliflower because we were short on the courgettes. It was delicious and felt like comfort food - like the Indian version of an American stew.
