Boxing Day Curry
Christmas is over! Depending on the person Boxing Day is either for tidying up a sea of gift wrapping the kids destroyed…or nursing a particularly festive hangover (or both!). What is true for nearly all of us is plenty of leftovers from the Christmas roast. And what better way to use them than to make a Boxing Day curry?
Okay, that might not be most people’s go-to but it definitely should be. A nice leftover turkey curry really hits the spot – there’ll be no dismal Bridget Jones-esque turkey curry buffet with one of my recipes! Not only does it tick the ‘saving on wasted food’ box, it’s also really easy and a great winter dish too. You could even add a nice Indian twist to the typical leftover coronation style sandwich as well.
