A super quick, delicious sandwich filler thats perfect for using up you roast dinner leftovers

There's nothing more satisfying than a good old sandwich, so move over ham and cheese and make way for the Sunday leftover extravaganza. I make this all the time so whether it's a Chrismas tradition in your home to feast on leftover turkey sandwiches or you want to use up some leftover roast bird this is a great way to do it. A few little spices make it all the more wonderful.
You can wrap this sandwich filling in some thick freshly-baked bread, in a wrap or even some delicious naan. Whatever you decide, it's something I can guarantee you will make over and over again.
- Ingredients
- Method
- 2-3 tbsp mayonnaise
- ½ tsp chilli powder
- ½ tsp garam masala
- ½ tsp salt
- tiny squeeze of lemon juice
- pinch of fresh coriander, chopped
- 100g cold cooked turkey, shredded (or chicken)
Method
- Mix the spices and coriander into the mayonnaise.
- Add the shredded meat and mix to coat it all.
- Smear the filling onto some fresh naan (or bread) and enjoy
