There is nothing like spicing up your leftovers for a new inspired delicious breakfast, snack or dinner. I hate to waste food and its a bit of a standing joke with my friends that I won't throw anything away but what can nI say its the way mum bought me up. because of this I have become demon in the art of reusing leftovers - from a lamb tagine with leftover roast lamb to a post Christmas turkey briyani there is always something snazzy you can throw together so here you have a very easy bubble and squeeze Indian style. I usually do this with leftover veg from Sunday dinner but honestly you can use whatever you have leftover.

- 800g mixed veg leftovers
 - leftover meat (optional)
 - 10 cherry tomatoes
 - 2 tbsp oil
 - 1 onion
 - 2 garlic cloves
 - 1 tsp mustard seeds
 - ½ tsp turmeric
 - 1 tsp garam masala
 - 1 chilli
 - 4 free range eggs
 
Method
- Chop veg into chunks and halve the tomatoes.
 - Heat oil in a wide based pan and add mustard seeds.
 - As they pop add the sliced onion until just soft and turning golden then add sliced garlic.
 - Add the turmeric, the vegetables, meat and chopped chilli to the pan and fry on a high heat.
 - Squash the veg down and cook for a few minutes until it is hot and just starts to crisp up a little.
 - sprinkle with garam masala and top with a fried egg for each person.
