Hari says

I'm always looking ways to jazz up the old sprout, not for me, because I love them as they are, but for everyone else. It's a long running joke in our house that my mother-in-law (who doesn't get all that excited about vegetables in general) has to eat at least one sprout at Christmas. I've cooked them with bacon, cream, and pickled veg in the past, so this year I decided to do the Indian thing and introduce a few choice spices.

I know what you are thinking - spices really? Well, it's a funny thing but they are really, really good. A bit like the saag my mum made with them one Christmas (I thought "that's just wrong" but it worked). The combination of spices and simple preparation makes it a welcome addition to Christmas dinner. Now it's just up to my mum-in-law to decide!

  • Ingredients
  • Method
  • 500g sprouts, cleaned and halved
  • 1 tbsp ghee
  • 2 tsp cumin seeds
  • 2 tsp mustard seeds
  • 2 onions, peeled and finely chopped
  • 1 tbsp ginger, minced
  • 1 tbsp garlic, minced
  • 1 tsp chilli powder or to taste
  • salt to taste

Method

  1. Heat ghee and add cumin and mustard seeds until they pop.
  2. Add onions and cook for about 5-10 mins until just browning.
  3. Add the ginger and garlic and cook for a few more minutes.
  4. Stir in chilli powder and salt.
  5. Add the sprouts with a little water and cook for about 5 mins until cooked (I like to leave mine a little crisp).

The recipe doesn't give the quantity go Brussel Sprouts but lists the onions twice. LOL So how many sprouts?
