Lightly spiced dry fried runner beans.
Hari says
I always forget how lovely this dish is – possibly because it's basically only runner beans which doesn’t sound too thrilling. But Indian cooking is very much about working with the seasons and runner beans are just so tender and wonderful to eat in the summer it makes perfect sense to create something lovely with them. This recipe is really simple and just requires very subtle spicing. Good for you, too.
- Ingredients
- Method
- 500g runner beans, sliced
- 1 tbsp mustard oil
- 1 tsp mustard seeds
- 1 tsp cumin seeds
- 1 tsp salt
- 1 tsp turmeric
- 1 tsp garam masala
- 1 chilli, finely chopped
Method
- Heat oil in a karahi, wok or pan and add mustard seeds. As they begin to pop add cumin seeds.
- When sizzling and fragrant reduce the heat and gently add the beans to the pan and stir.
- Turn the heat down and add turmeric, salt, and chilli - fry for a few minutes.
- Add approximately 50ml of water cover and leave to cook for 5-10 minutes stirring occasionally.
- If any liquid remains increase the heat and fry off.
- Adjust seasoning if required. Sprinkle with garam masala and serve.

Hi Sarah It does but I have to say runner beans are best fresh. They lose a bit of their texture once cooked and frozen but are still ok. Let me know how you get on and please do post a picture of your dish in the app. We would love to see it. Thanks hari

Hi Sarah I love this dish and have cooked it loads this summer too. It's just so good when you can pick the beans from the garden and cook them straight away. Lovely to hear that you enjoyed the dish as well. Thanks so much for sharing Hari

Dear Hari,
Can you clarify regarding mustard oil? All of the ones I look at say "external use only", even those sold by Asian grocers!!!!
There is some chatter on the net about it being poisonous... Is there a substitute, maybe?
Best wishes
Tanya-

Hi Tanya Mustard oil has a high level of uric acid which is why the EU deem it only for external use. Here are some details. I hope this helps http://www.harighotra.co.uk/cooking-guides/indian-cooking-ingredients/mustard-oil-facts You can just use Rapeseed oil if you prefer. Thanks so much for using the website. Hari
