Garlic and Mushroom Shorba

I love garlic and I love mushrooms and because they go great together here is a delicious, little spiced soup for you all to try. To make it a little richer you can also add a touch of cream, but this one was finished with a dash of chilli powder because I was in need of a chilli hit and some garam masala because it was freezing and I needed to warm up. 

I like this dish to be a fairly thick consistency although a traditional shorba would be much more watery - this way I can dunk in some naan for a more filling meal! 

  • Ingredients
  • Method
  • 1 tbsp Oil
  • 5 cloves garlic, chopped
  • salt and pepper, to taste
  • 300g chestnut mushrooms, quartered
  • 2tsp flour
  • 2 tsp butter
  • 600ml water
  • 1 tsp chilli powder
  • 1 tsp garam masala
  • cream (optional)

Method

  1. Heat 1 tbsp oil and add the garlic and cook until it browns. 
  2. Add the quartered mushrooms and stir in the salt and pepper. Cook for about 5-6 minutes.
  3. sprinkle in the flour and stir then add the butter.
  4. stir to brown the flour and add the water.
  5. Bring to  the boil and leave it to simmer for about 20 minutes.
  6. Blend the soup with a hand blender and stir in the garam masala and chilli. Stir, check the seasoning and adjust if required.
  7. Add some cream and serve.

    Hi Hari, I only just came across your website as I was recently gifted a 4L slow cooker for christmas & am researching indian recipes to try it out. This garlic & mushroom shorba sounds fantastic. Can this be done in a slow cooker? If so, are there any changes to the preparation for a slow cooker, and how long would I need to leave it in there for?

    Hi Hari,
    Came home from shopping yesterday, Cold and wet. decided to try this shorba for dinner, OMG, the family were going bonkers, the aroma through the house was fantastic, no one could wait long enough for it to cook, before I had to serve it up, It was BOSTIN!, served with black pepper croutons, certainly one for entertaining guests.
