Using Pumpkin (Kuddu) in Indian Cooking
Pumpkins are part of the squash family they have a thick skin with seeds and orange flesh inside. Most of the vegetable can be eaten from the leaves, flowers and even the seeds. When ripe they can be boiled, steamed, baked or roasted.
Pumpkin is used for both savoury and sweet dishes. From spiced sabji dishes with chunks of pumpkin cooked with spices to a spicy mashed version. It is also cooked with lentils to create dishes such as Sambar. In South India they also use it to make many sweet dishes such as halwa which is similar to pumpkin pie.
