Baby aubergines smeared in spices and tangy dried mango powder then baked

Aubergines are a great vegetable and I especially love these little miniature ones. This dish is simple to prepare and it makes a wonderful side dish. All you need are some ground spices and a flat pan or oven tray. Ideally, if you can get hold of amchoor (dried mango powder) then that is great but if not then a tiny squeeze of lemon juice at the end will have to do. Slice them, coat them, bake them - Done!

  • 1 tsp coriander seeds, crushed
  • ½ tsp cumin seeds crushed
  • ½ tsp turmeric
  • ½ tsp chilli powder
  • 1 tsp mango powder (amchoor)
  • ½ tsp salt
  • 1 tsp sugar
  • 8 baby aubergine
  • 3 tbsp mustard oil

Method

  1. Mix all the spices & salt together in a bowl.
  2. Slit the aubergines with a cross.
  3. Heat oil in a heavy based pan with a lid.
  4. Stuff the spice mix into the inside flesh of the auberines.
  5. Rub the outside of the aubergines with any remaining spice mix.
  6. Place them in the pan and cover the pan. Leave them to cook on a gentle heat.
  7. Turn over using some tongs after about 10 minutes. Turn again after another 10 minutes. Cook them for about 25-30 mins until they are soft and tender.

N.B These can also be cooked in the oven just bake for 30-40 minutes at 180ºC.

    This recipe says that it can be baked in the oven instead, what temperature and for how long?
