Halibut with Indian spices

A fragrant fish dish with the lovely aroma of fennel running through it. Easy to make, easy to eat and a great healthy alternative to traditional British fish and chips.

The fish used in dishes in India tends to be sourced locally and cooked in the same way your family has always made it. This dish is a lovely way to use Indian spices with a robust white fish that really draws in the aromas of the spices.

This not only tastes great but it is a simple dish to put together to make a beautiful mid-week light and healthy supper. This recipe will also work really well with other white fish too but as in India just make sure you use the freshest fish possible and enjoy.

  • 2 tsp cumin seeds
  • 2 tsp coriander seeds
  • 2 tsp fennel seeds
  • 4 cloves
  • 1 tsp turmeric
  • ½ tsp chilli powder (add more for more heat)
  • 4 halibut fillets or steaks (approx 140g each)
  • 1-3 tbsp mustard oil

Method

  1. In a dry cast-iron pan, toast the cumin, coriander, fennel, and cloves over medium heat until fragrant, about two minutes. Leave to cool for a few minutes.
  2. Transfer to a spice grinder or a mortar and grind to a fine powder. Put the ground spices in a small bowl and add the turmeric and chilli powder.
  3. Lay the halibut on a baking sheet and season with salt and pepper. Drizzle with the mustard oil. Sprinkle the spice mixture over the fish, then massage it in. Cover and refrigerate for an hour. Bring the fish to room temperature before cooking.
  4. Fry the halibut for 3 minutes on each side, until it's just opaque throughout. You can also cook the fish under a grill or baked it in the oven at 180°C for 10 minutes.

    The small amount of seasoning didn’t make sense. Didn’t cover even one filet. Who came up with the measurements?

    Made this one this evening, although with a slight variation. I didn't have any haddock so used cod instead. Also, I baked it in the oven with fresh chopped tomatoes and fresh coriander. Served with paprika wedges and chilli sweetcorn. It was too die for! Think I put too much chilli powder though. My face is burning!
