Indian potato wedges that are lightly spiced and baked

My delicious Indian chips made by very gently spicing up some potato wedges. I like mine with a light dusting of chilli but if you want them a bit more spicy the you can crank up the chilli level they are also great cooked with chilli flakes too.

I usually served them up with fish dishes, as a side whenever I have a barbecue or with some tandoori chicken. However I serve them, I do like to dunk them into some spicy tomato chutney.

They cook pretty quickly and take no time at all to prepare, so it's a lovely way to jazz up your potatoes.

  • Method
  • 4 large potatoes,
  • 1 tbsp oil
  • 1 tsp salt
  • 2 tsp cumin seeds, crushed
  • 1 tsp chilli powder
  • 1 tsp garam masala
  • 1 tsp paprika

Method

  1. Heat the oven to 180°C.
  2. Wash and scrub potatoes then cut into chunky wedges with the skin left on.
  3. In a large roomy bowl and all the spices and oil to make a rub. Add the potatoes and mix using your hand to coat them with the oil rub.
  4. Place wedges on an oven tray skin side down.
  5. Place in the oven to cook for 25-30 minuets until crisp and spicy.
