A delicious fresh herb cocktail with a slight deviation from the traditional Mojito.

It's a fresh and light cocktail with a rum base. I like to add a slight Eastern twist with a tiny bit of fresh ginger. Give it a go you will love it.

- 2 parts white rum
- 1 fresh lime
- 6 fresh mint leaves
- 4 fresh corinader leaves
- thin slice of fresh ginger
- 2-3 tsp of caster sugar
- dash of soda water
- cubed ice
- sprig of fresh mint
Method
- Cut the lime into wedges and squeeze the juice into a glass. Throw the lime wedges into the glass with the sugar and fresh ginger and squish everything together with a muddler (bar spoon, rolling pin etc) to release the fragrance and dissolve the sugar.
- Slap the mint and coriander leaves in your hands to relase the aromas and add to the glass.
- Mix, then half fill the glass with cubed ice and pour in the rum.
- Top with a splash of soda water and garnish with a sprig of mint.
