A kachumber is a lovely light salad and you can practically make with anything. This is a gorgeous corn salad that is sweet and vibrant and when it's mixed with fresh tomatoes, cucumber and dressed with a tangy Indian spiced dressing it makes this makes a superb healthy side. You can have it for lunch, as a barbeque side or even as a delicate little starter. Do try and get hold of some crispy corn kernels to sprinkle over this as it adds texture and another layer of delicious flavour.

- 300g tin sweetcorn
- ¼ of a cucumber, peeled and diced
- 2 tomatoes, diced
- crunchy corn (bought from supermarkets)
- handful of pomegranate jewels
- handful of pea shoots
Dressing
- ½ tsp honey
- 1 lime, juiced
- ½ tsp paprika powder
- 3cm fresh ginger, fine chopped
- 1 green chilly, fine chopped
- large pinch coriander leaves, chopped
- Salt to taste
Method
- Wash the corn and leave to dry.
- Mix all the dressing ingredients in jam jar and shake to mix all the flavours together. Set to one side.
- Place in a bowl the corn with the diced cucumber and diced tomatoes.
- Sieve the dressing over the salad and toss it together.
- Sprinkle in the pea shoots and finally, sprinkle the crunchy corn and pomegranate on top and serve.
