I have been making this salsa for many years and it has become a star in its own right in the eyes of my family and friends. I suppose it isn't really Indian, but it's made with some of the flavours that I love - chilli, avocado, onion, lemon - all the essentials that are going to produce a balance of tastes and textures. This is an amazing dip or salad, so go mad and give it a go.

- 1 ripe avocado
- 1 red onion
- 1 chilli, finely chopped
- Juice from 1 lemon
- Small handful of fresh coriander, chopped
Method
- Cut the avocado and onion into very small dices and place in a bowl.
- Add chilli, lemon juice and coriander and stir together.
- Leave for a few minutes and serve.

I always prepare this as a dip, but it always ends up being used as more of a salad - people always end up heaping it up on their plates!
