Spicy Courgette and Pea Fritter

Delicately spiced courgette and pea cakes

These spicy little fritters not only make a really tasty snack, but they work really well as a healthier alternative to the usual potato fritters. They are made with a very similar batter to a pakora, but flattened and shallow fried. In this recipe I have used plain flour but you can use chickpea flour too. And as always they work perfectly with a spicy and tangy chutney.

  • 2 medium courgettes, grated
  • 100g plain flour (or gram flour)
  • 1 tsp baking powder
  • 1 small onion, finely chopped
  • 50g frozen peas, defrosted
  • 2 cloves of garlic, finely chopped
  • salt to taste
  • 1 green chilli, chopped
  • handful coriander, chopped
  • 1 tsp chilli powder
  • 1 tsp garam masala
  • 1 tsp cumin seeds
  • oil for cooking

Method

  1. Grate the courgette and sprinkle with salt and leave for as long as you can. Place it in a colander in the sink, squeezing out any excess water.
  2. In a bowl mix together the flour and baking soda.
  3. Add the grated courgette, onion, peas, garlic, salt, chilli, coriander, chilli powder, garam masala and cumin seeds.
  4. Squeeze and mix everything together. If it's a little dry add a touch of water.
  5. Heat some oil (2 tbsp) in a nonstick frying pan.
  6. Take a large spoonful and place in the hot pan. Gently press to flatten (it will be sticky) and shallow fry fritters. Reduce the heat if it gets too hot.
  7. Cook on the first side until golden then flip and cook the other side.

    This is an excellent recipe. I was struggling to find recipes that were a bit different to use up courgettes in the courgette season but this is a great recipe, mild but tasty so good for kids and adults and shallowed fried makes them a bit healthier than deep fried. Will be making them again and adding to my top 10 recipe.

    As a an alternative to cakes, I made these for our Macmillan Coffee Morning and goodness me have they gone down a treat. I replaced the peas with sweetcorn which works well, and made a beetroot, yoghurt and dill dip. I'm now printing off several recipes for inspired colleagues. I regularly make these during the courgette season and definitely one of the most popular dishes in my repertoire. Thank you for the inspiration.
