Red Chilli Sauce

A lovely flavoured hot sauce made with two types of red chilli.

A wonderfully vibrant red chilli sauce made with roasted habaneros, red birds eye chillies and garlic. This sauce has a slightly sweet roasted flavour but be warned it is hot. A great one to show off to your friends. 

Top tip:

Coat your hands in a little oil and then wash them with soap to make sure you get rid of all unwanted chilliness from your fingers!

  • Ingredients
  • Method
  • 150g habanero chillies
  • 50g red birds eye chillies (or for a milder sauce jalapenos)
  • 1 large onion, sliced
  • 1 garlic bulb
  • 1 tsp salt (to taste)
  • 60ml vinegar

Method

  1. Put kitchen gloves on and remove the stalks from the chillies.
  2. Place on an oven tray with the whole bulb of garlic. Heat the oven to 180°C and roast for 15-20 minutes.
  3. Peel the garlic cloves and place into a pan with the chillies.
  4. Add the remaining ingredients to the pan and simmer for 30 minutes. Remove from the heat and leave to cool.
  5. Pour into a liquidiser and blend to a fine puree. If you want the sauce to be a thick sauce then leave it as it is but for a thinner sauce sieve. Store in a sealed jar - this will keep for three weeks in the fridge.

    Hi, been and diabetic for 38 years, now a Renal patience. Change of diets from no sugar added No potassium, no salt. So our has change to adding chillies to most our meals. Provide some taste and flavor. Looking forward to try your recipe of sauce. We have a few chillie plant growing.

    Is 'ordinary' malt vinegar used or wine vinegar please?
