A cooling, refreshing yoghurt drink flavoured with mint

A basic cooling lassi recipe with the added cooling effects of fresh mint leaves. It's a wonderful cooling drink that's savoury rather than sweet and it's delicious. I like to make mine so it's fairly watered down rather than the thick lassi's we are used to in the UK. Remember its a cooler so made fresh and poured over ice is just perfect when you are feeling hot and bothered and need something refreshing and healthy.

- 500ml Greek yoghurt
- water
- Handful fresh mint leaves
- 1 tsp black salt
- 1 tsp roasted cumin seeds
- mint leaves to garnish
- ice cubes
Method
- Put the yoghurt, mint, a splash of water into a blender and blitz to make a smooth drink. add more water if required.
- Roast the cumin seeds in a pan and grind to a powder in a pestle and mortar.
- Add half the salt and the roasted cumin powder to the yoghurt mixture.
- Blend again and check the seasoning and add a little more salt if required.
- Put the ice cubes into the glasses and pour the lassi over them, top with a couple of mint leaves.
