Refreshing nimbu pani with a zing of ginger

This is a wonderful take on Shrikanji or nimbu pani. Nimbu pani is a refreshing north Indian drink that is sold on every street corner as an amazing thirst quencher. This version I have added a little zing of ginger for a bit of warmth - well the summers we have here in the UK aren't anything like the ones in India so this is refreshing and soothing too.

- 150g ginger
- 130g sugar
- 1L water
- juice from 8 lemons
- 1 tsp rock salt or black salt as required
- ½ tsp chaat masala
- a few ice cubes
Method
- To make the ginger syrup peel the ginger and chop into roughly into chunks.
- Put the ginger, sugar and half the water into a pan and bring to the boil.
- Reduce the heat and leave it to simmer to reduce for about 40 minutes to an hour.
- Strain the syrup through a sieve and leave to cool.
- Strain the lemon juice into the remaining water and add the ginger syrup.
- Stir in the salt and chaat masala
- Check the flavour make any adjustments and leave to chill before serving over ice.
