A spiced jam made with Indian gooseberries

The Indian gooseberry is called Amla and is thought to be a sacred fruit for Hindus. They believe that it is a fruit that hold lots of vitamins and minerals and has lots of healing powers (an Indian super fruit if you like).
Bigger than English gooseberry and is much more tart and bitter in flavour. It tends to be eaten either steeped in salt water or dried. It is also great as a spicy pickle or chutney. This is more of a jam cooked with spices. This quantity will make you one jar full and it's great with cold meats as well as with a spicy curry or with poppadoms.

- 300g gooseberries (Amla)
- 400g sugar
- 3 cloves, ground
- 1 tsp ginger powder
- 4 black peppercorns
- 2 cardamoms (seeds only), ground
- 10 saffron strands
Method
- Put the gooseberries in a pressure cooker and cover with water. Cook them until the cooker whistles 4 times until the gooseberries are soft. DO NOT remove the lid of the pressure cooker until it has cooled and relased all the pressure.
- Drain the water and remove the seeds from the gooseberries.
- Place the flesh into a pan and puree using a hand blender.
- Add the sugar to the pan and heat gently. Bring the mixture to a boil and stir constantly
- One all the sugar has melted add the spices and mix well.
- Reduce the heat to low and let the mixture cook for 5-7 minutes, stirring occasionally.
- Once the mixture has thickened removed from the heat.
- Fill a sterlised jar with the mixture and leave to cool. Once completely cool, cover with the lid and store in the fridge. This will keep for up to 3 months.
