Nuts are a great source of protein and nurishing plant oils so they make great snacks and salad toppers. Ideally, from a healthy perspective you should have these unsalted but I do like to keep a jar of the salted variety in my larder. I know they can be expensive to buy so here is my DIY method of making your own salt and chill dry roasted almonds.

- 500g almonds
- 1 tsp salt
- 1 tbsp hot water
- 2 tbsp olive oil
- 1 tsp chilli powder
- 1 tsp garlic granules
- Sea salt to taste
- 1 tsp chilli flakes (optional)
Method
- Heat oven to 190°C degrees and line a large baking sheet with silicone or grease proof paper.
- Place the raw almonds in a large mixing bowl
- Stir 1 teaspoon of salt into the hot water until most of it dissolves and pour over the nuts in the bowl and mix until they are all coated.
- Place the almonds onto the prepared baking sheet in a single layer and bake in the oven for about 8 minutes, stir well and spread back into a single layer and bake another 7-8 minutes (about 15 minutes total). Keep an eye on them as they can burn quickly.
- Mix the olive oil with the chilli powder and garlic granules.
- Place the hot nuts back into the large bowl and pour the olive oil over them. Toss well until all the nuts are coated.
- Sprinkle on a little sea salt and chilli flakes and mix through.
- Spread the nuts out on the baking sheet to cool and crisp up. They will soak up the oil as they cool.
- Store in an airtight container at room temperature and enjoy as a snack.
