Paneer with Mixed Vegetables

A delicious vegetarian dish, full in flavour with a robust tomato masala sauce, and with the sweetness of seasonal vegetables and the creaminess of homemade paneer.

  • 400g paneer
  • 50g frozen peas
  • ½ red pepper, chopped into chunks
  • ½ green pepper, chopped into chunks  
  • 5 mushrooms, chopped into chunks
  • 1 onion, sliced thinly
  • 4 cloves of garlic, chopped finely
  • 1 tbsp ginger, grated
  • 1 chilli, finely chopped
  • 200ml tinned plum tomatoes
  • ½ tsp turmeric
  • 1 tsp cumin seeds, ground
  • 1 tsp chilli powder
  • 1 tsp salt
  • 1 tsp fenugreek
  • Handful fresh coriander, chopped
  • 1 tsp garam masala
  • 4 spring onions, finely sliced

Method

  1. Heat oil in a pan and add the sliced onions then gently cook until the onions have softened a little.
  2. Add the chopped garlic and stir. Leave to cook until the onions slightly brown.
  3. Stir in the tomatoes, grated ginger, salt, turmeric, fenugreek and chopped chilli.
  4. Leave these to reduce and blend together - this is you masala paste.
  5. Once the masala is think and shiny add the mixed vegetables and stir.
  6. Crumble the paneer into the pan and stir to coat with the masala.
  7. Cook for 5-10 minutes (add a little splash of water if it seems too dry). The paneer should have the consistency of scrabbled eggs. Once heated through remove from the heat.
  8. Sprinkle with garam masala, chopped coriander and finely sliced spring onions and serve with roti.

    Hi! My husband and I just found your site and can't wait to try some of these recipes. :) I was wondering what form the fenugreek is in for the Paneer with Mixed Vegetables. Are you using the dried leaves, seeds, or ground fenugreek? Thank you!
