Melon soup with a slight hint of chilli and toasted cumin

Sometimes we all want to do something a little bit different and I think this very simple melon soup is great. It doesn't need any cooking and is perfect for a healthy summer starter. Melons have a wonderful sweetness that works beautifully with a little hint of chilli. With this recipe I have infused a little chilli heat into the melon and finished with some roasted cumin. Give it a go.

- 1 melon
- 2 green chillies very finely chopped
- squeeze of lemon
- salt to taste
- pinch of cumin seeds, toasted and crushed
Method
- Cut open a melon and remove the seeds and remove the flesh from the skin.
- Place in a blender and blitz.
- Pour through a sieve to remove all the fibers.
- Add the chopped chilli to the sieved melon, mix and leave to infuse for and hour or so.
- When you are ready to serve, add a little salt and a squeeze of lemon and stir then sieve again.
- Pour into small bowls or little glasses to serve and top with some roasted cumin seeds.
