Light zingy lemon sorbet

A gorgeously tangy sorbet that is perfect after a warming, spicy curry. This is simple to put together and is just great to have in the freezer for a simple pudding. If you don't have an ice cream maker then yes, get one (they are pretty cheap) but you can also make this without one.

- 1 cup water
- 1 cup sugar
- 1 to 2 cups of freshly squeezed lemon juice
- 1 tbsp grated lemon rind
Method
- Place the water and sugar in a pan and set over a medium heat to dissolve all the sugar
- Once it has fully dissolved remove from the heat and leave to cool for about 5 minutes.
- Meanwhile, squeeze the juice from the lemons and stir the juice and rind it into the syrup. Stir it through.
- Once cooled pour the mixture into the freezer bowl of your ice-cream maker and leave to churn according to the manufacturers instructions.
- When it has frozen to form ice crystals put it into a freezer container (it will still be fairly soft), cover and freeze until it sets.
Note: If you do not have an ice-cream maker then put it into a container and freeze. After a few hours give it a mix through and put back in the freezer. Repeat 3 times.
