Sweet and sticky wings

You know I love chicken wings and I have a few recipes on the website, well here is another one! I love to try new flavours and combinations so this is a quick and easy Indonesian style wing. The sauce is sticky and sweet and the wings are coated in a spiced crispy coating then baked to make them crispy and delicious. I like to finish them with some crunchy peanuts and I also add more heat with some sliced red chillies but you don't have to.

- ¼ cup cornflour
- 1 tsp chilli powder
- salt and pepper to taste
- 1kg (approx) 12 chicken wings
- 2 tbsps peanuts, chopped
- 1 spring onions, sliced
- 1 red chilli, sliced
Sticky Sauce
- 200g brown sugar
- 250ml water
- 2tbsp fish sauce
- juice from 1 lime
Method
- Stir the sugar and water in a large saucepan over a low heat until it dissolves.
- Bring it to the boil and simmer gently for about 10 minutes until it thickens a little then remove from the heat.
- Stir in the fish sauce and lime juice and leave it to cool down.
- Line an oven tray with a baking sheet.
- Mix the corn flour, chilli powder, salt and pepper in a large bowl.
- Toss in the wings and ensure they are fully coated with the corn flour mixture. Shake off the excess and place in a single layer on the tray. Drizzle with oil. Cook in a hot oven (200°c) for about 1 hour, or until wings are cooked through.
- Pour the sticky sauce over the baked wings and toss to coat them all over. Transfer to a serving plate.
- Sprinkle with peanuts, sliced spring onion and red chilli.
