Slow Cooked Indian Food
In my opinion, slow cookers are one of the best inventions of the 21st century! A bold statement, I know, but as a busy mum, they really are a one-stop-shop to achieving rich, complex flavours and tender textures, without spending hours standing over a hot stove.
The wonder of a slow cooker curry means you can prepare everything the night before. Just chop up your chosen meat (a slow cooker chicken curry is to die for!) and vegetables and pop them in the fridge. Then, before you head out of the door on your way to work in the morning, you can simply throw everything in the pot and turn it on. That’s it!
When you get home later, you’ll be greeted by the mouth-watering aromas of a perfectly prepared curry, and what’s more, the only thing you’ll have left to cook is your rice. I really love to cook; it’s my passion. But every now and again, when you know you’ve got a busy evening ahead, one of my slow cooker curry recipes can really save the day.
