Using Potatoes in Indian Cooking
Potatoes are tubers that are a staple food in many parts of the world, especially in the west. They are categorised as to when they are harvested (early, mid-season and late) as well as their characteristics (whether waxy in appearance, or floury once cooked).
Generally waxy potatoes are great in salads and floury ones are perfect for roasting and mashing. There are also some key all-rounders which are great for any kind of cooking. These include the Maris Piper, King Edward, and Desirée potatoes.
Known as aloo this vegetable has so many uses in so many dishes. They have a saying in India that the potatoes is best friends with everyone because you can pretty much add it to any Indian dish and it works. It is great used on its own or with any other vegetable. It makes a great stuffing delicious cooked in sauces, roasted or fried.
