Here are some of my quick and really delicious Indian recipes that will get you in the mood to cheer on your team for the World Cup 2014 when they score.
Pre-match snacks to get you in the mood:
Kofta Bites - so quick and great finger food just a few napkins needed.
Chicken Tikka is a great recipe, just marinate the night before or first thing on the day. Then pop in the oven or skewer to cook on the barbecue.
Plain Aloo Tikki lovely served in a burger or on their own just make sure you have lots of tangy Mint chutney.
Take a breather at half time:
Mango Lassi If it's all getting too much just cool off with this refreshing yoghurt drink and start the second half with a clear head.
Dirty Lassi This adult take on the mango lassi drink and it’s a winner to get you in the Brazilian frame of mind. You could even freeze the mixture overnight to create Dirty Lassi ice cream.
To share with friends:
Lamb Madras is the perfect sharing curry. Just make up a big batch of it, leave to cook for an hour then serve with some of my Plain Basmati Rice - delicious!
Chicken Biryani feeds loads of people and is a beautiful one pot meal. Get it ready well in advance then pop it in the oven.
Paneer Makhani;A fabulous curry and not just for your veggie friends. Easy to make but packed full of flavour.
