Pea and Potato Curry

A simple and honest curry of potatoes and delicious green peas cooked in a warming tomato masala sauce.

This is a fabulous dish to cook when you have nothing in the fridge, the cupboards are bear and you need a little pick me up. Just take the single lonely potato from the bottom of your veg basket and peel the bag of frozen peas off the side of the freezer, throw in a little Indian magic and there you have it - beautiful aloo muttar simply wonderful.

  • 1 tbsp oil for cooking
  • 1 onion, finely chopped
  • 3 garlic cloves, chopped
  • 3cm piece of ginger, grated
  • 250g tinned plum tomatoes
  • 1 green chilli, finely chopped
  • 1 tsp salt
  • 1 tsp fenugreek powder (methi)
  • 1 tsp turmeric
  • 1 tsp chilli powder
  • 1 or 2 potatoes, peeled and chopped into 3cm cubes
  • 200g frozen peas 
  • 1 tsp garam masala
  • Handful of fresh coriander, chopped

Method

  1. Heat oil and add onion and after a few minutes stir in the garlic. Cook for about 10 minutes until the onions are soft and turning golden.
  2. When the onions are cooked add the tomatoes (which you can whizz up before hand), grated ginger, salt, turmeric, fenugreek and chilli.
  3. Stir together and cook the sauce until the tomatoes and onion melt together creating a thick masala paste.
  4. Once it is thick and shiny add the pototes. Stir to coat them in the sauce then put the lid on the pan and reduce the heat. Leave to cook for 5-10 minutes before adding the frozen peas.
  5. Leave to cook for another 10 minutes until the potatoes are soft. (Note: if your potatoes stick just add a splash of water. Don't stir too much as you dont want the potatoes to mash).
  6. Pour in enough hot water to get the consistency you want. Sprinkle with garam masala and fresh coriander and serve with roti or rice.
